I know... I'm late! The past couple of weeks have kicked my ass! Not only have I had a ton of work to do with editing and uploading, blah blah blah, but this game has completely sucked the time right from under me!
It's addictive, fun for the whole family, even though I take it pretty seriously and am out for blood when someone gets in my way lol! It's pretty sad that Joe and I play as much as we do and sometimes we even let Blake play with us (thats even more sad huh?) Anyways, we are almost done beating the game, so hopefully life goes back to normal soon lol!
Anyways, I didn't really even have a recipe done for last week, but I had a MNI (mommy's night in) with my mom's group last Friday and had to whip up something super fast! I was also starting to feel a bit sick so didn't have a chance to get to the market, nor did I have the energy to do anything... kinda had to make do with what I had on hand, which wasn't much lol!
I searched the cabinets and found a hodge podge of crap, but I did find some white cake mix and thought "Perfect, I can make them whatever flavor I want and cupcakes are easy when pressed for time!" Then while grabbing Blake from school, on the way up the hill to my house (I kinda live out in the middle of nowhere) there is a local gal who sells flowers and whatever produce is in season... well, here in San Diego, nothing says Spring like STRAWBERRIES! So I grabbed a small carton and made my way to the house.... this is what the white cake mix, the strawberries, butter, 4 oz's of cream cheese, 1 tablespoon of vanilla, 2 drops of red food coloring, and 2 cups of powdered sugar produced...
I frost in the pan because it double's as my nifty holder too... I adore this one I got at Target:

wait, I have to stop here to share this freaking adorable mini wood treat holder thing I found. Over the holiday's I was grabbing some home decorating stuff at Pier 1 and Makena showed me this "petit four" cake stand (I love how she gravitate's towards the same stuff I like... how proud I am of my girly girl). At the time I was kind of in a rush and thought it was super cute, but didn't buy it (what restraint I showed huh). But a few weeks ago when I went prop shopping for a newborn shoot I was getting ready for, there is was again, only 1 more left AND it was on CLEARANCE. Beat still my heart :) Got it for like $5 and I love it!

Not the best cupcake's in the world, but good, easy, and they look pretty lol!
All I did was prepare the cupcake batter with the directions on the box (any white cake mix). Before I poured them into the cupcake liners, I mashed up about 1 cup of strawberries in the food processor then added that to the batter until it was all mixed in and no more white showed. Baked for 20 minutes or whatever the box says, then let cool.
In the meantime, I whipped up the frosting. I only had 1 stick of butter and half a package of cream cheese, so figured that would be enough to get me by. Mixed until it was super fluffy, added 1 tablespoon of vanilla extract, and then slowly added about 2 cups of powdered sugar (wait, another ADD moment... it might be cute to sprinkle some more powdered sugar over the tops of these too :) ). I also added a couple of drops of red food coloring to make em pink, just how I like it! The frosting was pretty thin, so I put it in a piping bag and let it set up a bit in the fridge. I guess you can also just slather your frosting on the cupcakes too and put them in the fridge, but I wanted to make em neat and pretty like :)
Once the cupcakes were cooled completely, I frosted them with a big fat circle tip, then topped each one off with 2 slices of fresh strawberries.
How's that for a quickie!
I so wish I was talented enough to make something (not to mention something awesome) on the fly like that!! But, alas, I stink at baking (which I'm better at than cooking!) so that doesn't happen. I'm neurotic at the store making sure I have everything exactly like the directions/recipe says. :) They look great though!
